Tex-mex Stuffed Peppers with Grilled Chicken and Mango Salsa

I tend to plan my meals in advance for the week. That way I can save money and chose healthy options but when I saw that these colorful peppers on sale at my local grocery store I had to pick up a few.

I figured out a way to remix leftovers from taco night to create these Tex-Mex Stuffed Peppers. I threw the leftover ingredients into the peppers, added some extra seasonings and baked them at 350 degrees for 30 minutes. Quick, easy, and delicious is how I like it.

Ingredients

4 Whole Sweet Peppers

1 Cup Brown Rice

1 Cup Corn

1 Cup Black Beans

1/4 Chopped Cilantro

1 Chopped Jalepeño (Skip this if you don’t like spicy foods

1/2 Cup Shredded Pepper Jack Cheese (Optional)

1/2 Cup Lime Juice

1 Tsp. Cumin

1 Tsp. Coriander

1 Tsp. Chili Powder

1 Tsp. Garlic Powder

Salt (To taste)

Pepper (To Taste)

1 Tsp. Olive Oil

Directions

  1. Preheat oven to 350 degrees.
  2. Start with a bowl of brown rice and add the corn, black beans, lime juice and seasonings. Toss the ingredients well.
  3. Add the jalepeño, cilantro, cheese, and olive oil.
  4. Set aside the rice mixture.
  5. Cut the tops off of the sweet peppers. I saved the tops, chopped the bits of sweet peppers up and added them to my rice mixture because waste not, want not.
  6. Scoop out the inside of the peppers then place the peppers in a baking dish.
  7. Fill the peppers with your rice mixture.
  8. Bake at 350 degrees for 30 minutes or until the peppers just become tender.

Fried Tofu Bites with Guacamole was the appetizer that saved me when I was ready to throw in the towel. I was craving something fried and unhealthy but life is about balance. I paired my fried tofu with fresh, nutritious guacamole. Win!

I channeled my inner Rachel Ray for this dish. It took me less than 30 minutes and I made sure to say “E-V-O-O Extra Virgin Olive Oil” every time I picked up the bottle of oil. Quick and easy!

Overall, I felt lighter and less tired. Usually around 2pm I’m reaching for my second cup of green tea but eating vegan helped me to stay more alert during the day. Eating vegan always helps me to explore new food options while maintaining a healthy lifestyle.

The Little Beet for Lunch

Sometimes I want food fast without it being fast food and that’s what I got when I stumbled across The Little Beet. The Little Beet I visited is located in Roosevelt Field Mall in Garden City, NY. I know what you’re thinking and trust me I’ve never been a fan of mall food either but this isn’t your typical greasy mall meal. The menu is simple yet varied.

You choose your protein plus sides. They also have salads and cold-pressed juices to choose from. I opted for the salmon with string beans, lentils, and sweet potatoes, and it was everything I expected. The service was speedy, the meal was fresh and delicious. I’d definitely visit The Little Beet again to try out more options. There’s also a Little Beet in Manhattan for those in NYC that want to check it out.

12 Ways I Use Coconuts

I’m cuckoo for coconuts. Okay…that line was horribly corny. Let’s forget I ever typed that. But hey, look at what I found at a street fair in Brooklyn, NY.

Coconut

It’s a coconut and I was sipping on fresh coconut water! I was in love. I use coconuts for everything. Seriously, it’s my holy grail product. Here are a few ways I use coconuts:

  1. I drink coconut water
  2. I use coconut oil as a pre-wash for my hair
  3. As a hair oil to seal in moisture
  4. Coconut oil all up in my deep conditioners
  5. I gently reheat leftover grains or vegetables with coconut oil
  6. I use both coconut oil and water in my smoothies
  7. Coconut oil as a cuticle oil
  8. Coconut oil as a night time lip treatment to keep my lips smooth and plumped.
  9. Oil pulling for oral care
  10. As a body oil for sexy skin
  11. As a massage oil for sexy time
  12. As an eye cream for my dark circles

 

I get a jar of unrefined, extra virgin coconut oil for the kitchen and one for my beauty use. Both jars last for months. At $9 a jar I’d say that’s a pretty good deal.

The Power of Positive Energy

So this past weekend a friend came to visit. We were lounging around, catching up, cracking jokes while talking about any random topic that happened to pop in to our heads. Soon the conversation steered towards talking about the importance of positivity when he shared this story with me.

Him: The other day I woke up with the craziest feeling but in a good way. I woke feeling happier than I ever have in my life. Like, I couldn’t explain it…I was so…happy.

Me: What? How? I mean were you were probably dreaming?

Him: Nah, not that I can remember. I woke up feeling like I could accomplish anything. So many happy thoughts were running through my mind at once and I couldn’t keep up with them all. I was thinking maybe I should do a workout, maybe I should go running, maybe I should talk to my mom. The feeling was crazy. I was so…happy.

Me: That’s crazy. So what did you end up doing?

Him: Talked to my mom. Then went back to sleep. It was 2am.

Me: *now in fits of giggles* All of that and you talked to your mom?

Him: Sure, why not? Seemed like the right thing to do at the moment.

Me: Basically you reached some type of Nirvana in your sleep and you didn’t even know.

Now we’re both laughing and cracking jokes. As the conversation continued I wondered…what causes such positive energy to manifest within us that we could wake up feeling like we can conquer the world. Could it be a pleasant dream? A healthier lifestyle? Life changes that steer us on to the paths of achieving our dreams? Whatever the reason that’s a wonderful feeling to have right? I believe that we all have the ability to cultivate positive energy. It is through good deeds, following our dreams, eating to nourish our bodies, and taking care of our bodies through exercise. Remember to take  some time out to meditate. Reflect on your positive affirmations and continue to bring love and light in to your life. Just thought I’d share.
