What do you do with leftover quinoa? You toss in some vegetables and create the perfect easy meal of course!
1 cup leftover quinoa
A handful of chopped kale (or any dark, leafy green of your choice)
One carrot chopped
1/4 chopped sweet peppers
1 tablespoon of unrefined extra virgin coconut oil
Sea Salt to taste (optional)
- Place one tablespoon of coconut oil in a pan over medium heat
- Add your vegetable and gently heat. You mad add a teaspoon of water and cover the pan for a few minutes to help cook the vegetables. Do not over cook the vegetables because it will get soggy and the longer you heat the vegetables the more nutrients they will lose.
- Add the rice and your sea salt. Toss the ingredients in the pan. Heat thoroughly but do not over cook.
Makes for an easy lunch idea. You can get creative with the spices. I like to add cayenne for an extra kick.
