Tex-mex Stuffed Peppers with Grilled Chicken and Mango Salsa
I tend to plan my meals in advance for the week. That way I can save money and chose healthy options but when I saw that these colorful peppers on sale at my local grocery store I had to pick up a few.
I figured out a way to remix leftovers from taco night to create these Tex-Mex Stuffed Peppers. I threw the leftover ingredients into the peppers, added some extra seasonings and baked them at 350 degrees for 30 minutes. Quick, easy, and delicious is how I like it.
4 Whole Sweet Peppers
1 Cup Brown Rice
1 Cup Corn
1 Cup Black Beans
1/4 Chopped Cilantro
1 Chopped Jalepeño (Skip this if you don’t like spicy foods
1/2 Cup Shredded Pepper Jack Cheese (Optional)
1/2 Cup Lime Juice
1 Tsp. Cumin
1 Tsp. Coriander
1 Tsp. Chili Powder
1 Tsp. Garlic Powder
Salt (To taste)
Pepper (To Taste)
1 Tsp. Olive Oil
Tex-Mex Inspired Stuffed Peppers
Preheat oven to 350 degrees.
Start with a bowl of brown rice and add the corn, black beans, lime juice and seasonings. Toss the ingredients well.
Add the jalepeño, cilantro, cheese, and olive oil.
Set aside the rice mixture.
Cut the tops off of the sweet peppers. I saved the tops, chopped the bits of sweet peppers up and added them to my rice mixture because waste not, want not.
Scoop out the inside of the peppers then place the peppers in a baking dish.
Fill the peppers with your rice mixture.
Bake at 350 degrees for 30 minutes or until the peppers just become tender.
I decided to recharge my body by eating vegan for 3 weeks and I loved it. But there are a few things I learned while eating vegan:
Cilantro makes everything better. It’s true.
Eating vegan is super affordable.

I added a heaping bunch of cilantro for because it’s great for cleansing but mostly because I’m addicted to cilantro.

Fried Tofu Bites with Guacamole was the appetizer that saved me when I was ready to throw in the towel. I was craving something fried and unhealthy but life is about balance. I paired my fried tofu with fresh, nutritious guacamole. Win!
Soba Noodles Tossed in Olive Oil with Garlic and Cherry Tomatoes
I channeled my inner Rachel Ray for this dish. It took me less than 30 minutes and I made sure to say “E-V-O-O Extra Virgin Olive Oil” every time I picked up the bottle of oil. Quick and easy!
Overall, I felt lighter and less tired. Usually around 2pm I’m reaching for my second cup of green tea but eating vegan helped me to stay more alert during the day. Eating vegan always helps me to explore new food options while maintaining a healthy lifestyle.
Franchia Vegan Cafe is located in Midtown – New York, NY. This Korean restaurant sent my taste buds in to another dimension. Seriously, this place is amazing. The Soy ‘Beef’ Cutlet Bibimbap was full of flavor and spice. Franchia Vegan Cafe’s menu is so extensive that I’ll have to return many more times to try everything I’ve been eyeing on the menu. I’d recommend this restaurant to meat lovers and vegans alike. It’s so flavorful that meat is the last thing on your mind.

This grilled chicken with kale, broccoli, and sweet potatoes was made by The Little Beet. It’s not like you haven’t heard me raving enough about it on my social networks for the past three weeks. This meal can be recreated at home if you don’t live near The Little Beet.
Another healthy meal on-the-go provided by The Little Beet. What I loved most here was the Southwest Style Millet that featured avocados. I can’t wait to recreate this at home.
For this meal I pulled out some leftover chicken and popped the sweet potato and broccoli in the oven. Hassle-free and simple.
Although this isn’t a full meal it deserves a feature. I tossed the broccoli in lemon oil and sprinkled garlic powder and sea salt on top. I roasted these in the oven for about 20 minutes. The flavor was phenomenal.
This meal was ordered from my local thai spot. I put together a few sides to make a budget friendly, healthy, flavorful meal. The ginger dressing that came with the salad was to die for!
Grilled Salmon with Charred Broccoli and Lentils
Another Little Beet feature here. Perfectly grilled salmon with a heaping mound of vegetables.
I seasoned the chicken with a dry rub then pan seared it in olive oil to lock in the juices. I blanched the vegetables then tossed them in a garlic infused olive oil.

Sometimes I want food fast without it being fast food and that’s what I got when I stumbled across The Little Beet. The Little Beet I visited is located in Roosevelt Field Mall in Garden City, NY. I know what you’re thinking and trust me I’ve never been a fan of mall food either but this isn’t your typical greasy mall meal. The menu is simple yet varied.
You choose your protein plus sides. They also have salads and cold-pressed juices to choose from. I opted for the salmon with string beans, lentils, and sweet potatoes, and it was everything I expected. The service was speedy, the meal was fresh and delicious. I’d definitely visit The Little Beet again to try out more options. There’s also a Little Beet in Manhattan for those in NYC that want to check it out.
